White Chocolate Strawberry Cheesecake
Ingredients
Crust
- 2 cups graham cracker crumbs (or digestive biscuits)
- ½ cup melted butter
- 2 tbsp sugar
Cheesecake Filling
- 16 oz (450 g) cream cheese, softened
- 1 cup white chocolate, melted & cooled
- ¾ cup sugar
- 1 cup heavy cream
- 2 tsp vanilla extract
- 3 large eggs
- 1 tbsp cornstarch
- ½ cup strawberry puree (fresh strawberries blended)
Strawberry Swirl
- 1 cup chopped strawberries
- 2 tbsp sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch + 1 tbsp water
Instructions
1. Prepare the Crust
Mix crumbs, butter, and sugar.
Press into a springform pan.
Bake at 180°C / 350°F for 10 minutes, then cool.
2. Make Strawberry Swirl
Cook strawberries, sugar, and lemon on medium heat until soft.
Add cornstarch slurry and cook until thick.
Let cool.
3. Cheesecake Filling
Beat cream cheese and sugar until smooth.
Add melted white chocolate and vanilla.
Mix in eggs one at a time.
Fold in cream and cornstarch.
Gently stir in strawberry puree.
4. Assemble
Pour filling over crust.
Drop spoonfuls of strawberry swirl and use a toothpick to marble.
5. Bake
Bake at 160°C / 325°F for 50–60 minutes.
Center should slightly jiggle.
Cool, then refrigerate at least 4 hours.
