Pickled Beets

Instructions

  1. Wash the beets thoroughly and trim the tops, leaving about 1 inch of stem.
  2. Place the beets in a large pot and cover with water.
  3. Bring to a boil and cook for 30–40 minutes or until the beets are tender.
  4. Drain and let them cool slightly, then peel off the skins.
  5. Slice the beets into rounds or small pieces.
  6. In a saucepan, combine vinegar, sugar, water, cloves, allspice, and salt.
  7. Bring the mixture to a boil and stir until the sugar dissolves.
  8. Add the sliced beets and simmer for 5 minutes.
  9. Transfer the beets and liquid into a jar or container and let them cool.
