Ingredients

  • 1 kg chicken pieces (drumsticks, thighs, or wings)
  • 1 cup buttermilk (or milk + 1 tbsp vinegar)
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp chili powder (optional)
  • Cooking spray or oil

Instructions

  1. Marinate chicken in buttermilk for at least 1 hour (overnight is best).
  2. In a bowl, mix flour and all spices.
  3. Remove chicken from marinade, let excess drip off.
  4. Coat chicken well in the flour mixture. Press to stick.
  5. Spray chicken lightly with oil.
  6. Preheat air fryer to 180°C / 360°F.
  7. Air fry for 25–30 minutes, flipping halfway and spraying again.
  8. Cook until golden, crispy, and internal temp reaches 75°C / 165°F.

  • For extra crunch: double coat (dip again in buttermilk, then flour).
