Famous Cream Puffs (Classic Choux Pastry)

Ingredients

For the Pastry (Choux):

  • 1 cup (240 ml) water
  • ½ cup (115 g) unsalted butter
  • 1 cup (125 g) all-purpose flour
  • 4 large eggs
  • Pinch of salt

For the Cream Filling:

  • 2 cups (480 ml) heavy whipping cream
  • ¼ cup (30 g) powdered sugar
  • 1 tsp vanilla extract

Optional: Powdered sugar for dusting


Instructions

  1. Make the dough:
    • Preheat oven to 400°F (200°C). Line baking sheet with parchment.
    • In a saucepan, bring water, butter, and salt to a boil.
    • Remove from heat, add flour all at once, stir until smooth.
    • Return to heat and cook 1–2 minutes until mixture forms a ball.
    • Cool slightly, then beat in eggs one at a time until smooth and glossy.
  2. Bake:
    • Pipe or spoon small mounds onto baking sheet.
    • Bake 20–25 minutes until puffed and golden.
    • Do not open oven during baking.
    • Cool completely.
  3. Make filling:
    • Whip cream, powdered sugar, and vanilla until stiff peaks form.
  4. Fill:
    • Slice puffs in half or poke a hole in the bottom.
    • Fill with whipped cream.
    • Dust with powdered sugar.
