
Ingredients:
- 2 large potatoes, peeled and grated
- 2 eggs
- 2 tbsp flour (optional, for extra crispiness)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped parsley (optional)
- Oil for frying
Instructions:**
- Grate the potatoes and squeeze out excess liquid using a clean towel.
- In a bowl, mix grated potatoes, eggs, flour (if using), salt, pepper, and parsley.
- Heat oil in a skillet over medium heat.
- Spoon mixture into the pan and flatten slightly.
- Cook 3–4 minutes per side until golden and crispy
