🍓 White Chocolate Strawberry Cheesecake

Ingredients

Crust

  • 200 g graham crackers or digestive biscuits, crushed
  • 100 g butter, melted

Cheesecake Filling

  • 500 g cream cheese, softened
  • 200 g white chocolate, melted and slightly cooled
  • ¾ cup sugar
  • 3 large eggs
  • 1 cup heavy cream or sour cream
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch

Strawberry Topping

  • 2 cups fresh strawberries, chopped
  • ½ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 2 tbsp water

Instructions

Crust

  1. Mix crushed biscuits with melted butter.
  2. Press firmly into the bottom of a springform pan (22–24 cm).
  3. Bake at 180°C (350°F) for 10 minutes. Let cool.

Cheesecake Filling

  1. Lower oven to 160°C (325°F).
  2. Beat cream cheese until smooth.
  3. Add sugar and vanilla, mix well.
  4. Blend in melted white chocolate.
  5. Add eggs one at a time, mixing gently.
  6. Mix in cream and cornstarch until just combined.
  7. Pour over crust.
  8. Bake 50–60 minutes until edges are set and center slightly jiggly.
  9. Turn oven off, crack the door, and let cheesecake cool inside 1 hour.
  10. Chill at least 4 hours (overnight is best).

Strawberry Topping

  1. Cook strawberries, sugar, and lemon juice over medium heat.
  2. Add cornstarch slurry and simmer until thick and glossy.
  3. Cool completely.

Assemble

  1. Spoon strawberry topping over chilled cheesecake before serving.
