
🍓 White Chocolate Strawberry Cheesecake
Ingredients
Crust
- 200 g graham crackers or digestive biscuits, crushed
- 100 g butter, melted
Cheesecake Filling
- 500 g cream cheese, softened
- 200 g white chocolate, melted and slightly cooled
- ¾ cup sugar
- 3 large eggs
- 1 cup heavy cream or sour cream
- 1 tsp vanilla extract
- 1 tbsp cornstarch
Strawberry Topping
- 2 cups fresh strawberries, chopped
- ½ cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch + 2 tbsp water
Instructions
Crust
- Mix crushed biscuits with melted butter.
- Press firmly into the bottom of a springform pan (22–24 cm).
- Bake at 180°C (350°F) for 10 minutes. Let cool.
Cheesecake Filling
- Lower oven to 160°C (325°F).
- Beat cream cheese until smooth.
- Add sugar and vanilla, mix well.
- Blend in melted white chocolate.
- Add eggs one at a time, mixing gently.
- Mix in cream and cornstarch until just combined.
- Pour over crust.
- Bake 50–60 minutes until edges are set and center slightly jiggly.
- Turn oven off, crack the door, and let cheesecake cool inside 1 hour.
- Chill at least 4 hours (overnight is best).
Strawberry Topping
- Cook strawberries, sugar, and lemon juice over medium heat.
- Add cornstarch slurry and simmer until thick and glossy.
- Cool completely.
Assemble
- Spoon strawberry topping over chilled cheesecake before serving.
